Recipe of the Week 5-1-2012

Fresh Guacamole

Ingredients

  • 2 Ripe Avocadoes
  • 2 Lg Roma Tomatoes, Diced
  • ½ Lg Jalapeno, Small Dice
  • ½ Med Red Onion, Diced
  • ½  Lg  Red Pepper,  Diced
  • ¼ cup Cilantro, Chopped
  • 1 Lime

Method

In large bowl,   Cut avocado and carefully remove pit; with a spoon scoop out flesh and place in bowl.   Smash avocado, with a fork or potato masher, then combine with tomatoes, onions, peppers, cilantro, and juice of lime.  Mix together and refrigerate for 2 hours prior to serving.

Mexican Chili Beef Tacos

Ingredients

  • 2 lbs. Cannata’s Mexican Chili Beef Sausage
  • 6 ea  8” – 10”  Flour Tortilla Shells

Method

In a large skillet,   over high heat brown the sausage for 5-7 minutes until fully cooked.
Place on tortilla shells and top with your favorite toppings…Shredded Lettuce ….Cheese….Sour Cream…Guacamole …etc.
